Roll Up Lunch + A Couple of Cooks & Green Bean Challege

This last week I customized my Green Bean bin much further with add on's then I ever had before and actually got myself out of the dreaded grocery trip this week!! (I had many things on hand already for my planned meals so this was an easy week to attempt such a feat!) But today, I wanted to share this little lunch I made for myself and the kids yesterday. Every single part of this meal was from my Green Bean bin! Like I said, I "added on" a fair amount this week in my bin with sliced smoked turkey, provolone cheese, & the tortillas. The tomato was already included in the bin and I just swapped other things out for my avocado. I cook every evening and then our lunches are almost always leftovers but I felt like switching it up this week.  I don't know what it is with kids and "little food" but I knew they would gobble something like this up if I cut it into "little sandwiches" as Janae called them!  They both loved it (and to be completely honest, my kids have never taken to avocado before. I've tried and tried and tried.) But neither one of them even mentioned it yesterday. I'll take a "win" however I can get it people!!! hahahaah But truly, I love sitting back knowing they were having a really healthy lunch and there wasn't any fight involved.


Ironically, as I planning this meal for yesterdays lunch earlier this week, my contact from Green Bean Delivery and I were emailing and she wanted me to know about this  challenge going on right now. A Couple Cooks and Green BEAN Delivery challenge Hoosiers to cook healthy meals for “Cook for Health September”

Indianapolis food blog partners with Midwest farmer and artisan network to provide Indiana residents the opportunity to win three free months of organic produce and natural grocery delivery

INDIANAPOLIS (Sept. 10, 2014) – A Couple Cooks, an influential Indianapolis food and health blog created by husband and wife, Alex and Sonja Overhiser, announces today its new campaign, “Cook for Health September.” Challenging Hoosiers to cook and eat healthy meals, the couple has partnered with Green BEAN Deliveryan online home delivery service that provides organic produce and natural groceries to Midwest members, to inspire Indiana residents to cook healthy food at home for lasting positive effects on one’s health.

From Sept. 8-30, participants can cook a meal at home using whole, unprocessed food ingredients and post a photo and description of the meal with the hashtag #cookforhealthseptember on Instagram. If participants do not have an Instagram, they can email the photo to A Couple Cooks at acouplecooks@gmail.com. Contestants who submit photos are entered to win three free months of Green BEAN Delivery bins and a chef’s knife provided by A Couple Cooks.
